A rich, dark ginger cake

This is an old Elizabeth David favourite. My mother would serve this with a good Cheddar and an apple, and being a good and faithful son, I have followed her excellent example. Be careful not to overcook it: the moist texture of the loaf is important. Also, don’t stint on the ginger – I usually add a little bit of the preserved ginger syrup to the batter.
